Black olive mini savarin with veal tongue stew.

Pibil style lamb neck crispy toast.

Foie and iberican pork "pate en croute" with pickles.

Lamb "chorrillo", liquid green salad and lamb paté.

Galician "cacheira" with squid-carbonara tagliatelle.

Grilled razor clam and veal tendons in meuniere sauce.

Sherry style rabbit kidneys witth mushrooms and parmentier.

Pig snout, chickpeas and white prawn tartar.
