In February 2015 he started his personal project, La Tasquería de Javi Estévez, where he showed the public his commitment to the city and, above all, to that offal cuisine that so well represents the people of Madrid.
This initiative earned him the 2016 Revelation Chef Award at the Madrid Fusión international gastronomy congress, as well as a mention to Restaurante Revelación at the XIII Metrópoli Gastronomic Awards and another at the ABC Salsa de Chiles gastronomic awards as the best traditional cuisine restaurant.
Subsequently, there have been many merits and recognitions achieved by this young but outstanding professional who is called to be one of the great chefs of Spanish cuisine.
